Erica’s Couscous Slaw

From The Eat Clean Diet Cookbook

(LOVE, LOVE, LOVE TOSCA!!!  I’VE EATEN THESE RECIPES TOO MANY TIMES TO COUNT!)

 

INGREDIENTS

1 ½ cups low-sodium chicken or vegetable stock

¼ tsp powdered saffron

1 ½ cups whole-wheat couscous

½ cup diced celery

2/3 cup dried currants 9soaked in water)

1/3 cup pine nuts, lightly toasted

¼ cup freshly minced parsley

¼ cup fresh lemon juice

¼ tsp cinnamon

1-2 Tbsp extra virgin olive oil

 

PREPERATION

1.     In a medium saucepan, place chicken or vegetable stock, olive oil and saffron.  Bring to boil.  Add couscous to the boiling water.  Cover and remove from heat.  Let stand 4 minutes.

2.     Transfer couscous to a decorative serving bowl.  Add remaining ingredients and toss until well combined.  Serve immediately as a Clean-Eating accompaniment to any lean protein.
