Apple, Fennel, and Pistachio Salad

The author of this book is from Chicago, heard us talking about him, and sent us this book!

 

Fennel has a mild taste of licorice, but even if you don’t like licorice (I don’t), you will love finely sliced fennel on this fresh and crunchy salad.  The fennel makes the salad special-don’t skip it.

 

INGREDIENTS

 1 apple, chopped

½ fennel bulb, thinly sliced

3 cups green spring salad mix

2 Tbsp Universal Lemon-Flax Vinaigrette*, or

                  Low-fat Italian dressing

 

TOSS ALL THE INGREDIENTS TOGETHER!

 

 

*UNIVERSAL LEMON FLAX VINAIGRETTE

¼ cup lemon juice (juice from 1 or 2 lemons)

¼ cup flaxseed oil

¼ cup balsamic vinegar

1 Tbsp Dijon mustard

1 clove garlic, minced

Salt and black pepper to taste

 

WHISK ALL INGREDIENTS TOGETHER.  KEEP IN FRIDGE ABOUT 7 DAYS.
